This is my mum’s childhood cake. She used to eat it after swimming practice.
Preparation: 30 min.
Serves: 8 people.
Ingredients:
- 150g flour
- 150g sugar
- 150g butter
- 1 egg
- 3 yolks
- a dash of salt
- zest of 1 lemon
- almond to decorate
- Preheat the oven to 180c.
- Beat the eggs and the sugar until the mixture becomes clear and soft.
- Add the flour and melted butter.
- Whip until smooth.
- Add the zest of a lemon.
- Pour in a baking tray, previously lined with greaseproof paper.
- Decorate the surface of the cake with almonds.
- Cook for 40min at 180c.
- Remove the cake from the oven and let it cool. Before serving, sprinkle with icing sugar.
