Light carrot cake

A very light cake, perfect for breakfast or a healthy snack.

Preparation: 5 min.

Serves: 8 people.

Ingredients:

  • 150g flour
  • 150g almond flour
  • 100g sugar or erythritol
  • 3 eggs
  • 120g extra virgin olive oil
  • the juice of 2 oranges (200g ish)
  • baking powder
  • 4 carrots, grated
  • almond flakes to decorate.
  1. Preheat the oven to 180c.
  2. Put the carrots, eggs, olive oil and orange juice into a blender. Blend until smooth.
  3. Add the sugar, the two types of flour and the baking powder.
  4. Blend until completely mixed and smooth.
  5. Pour the mixture into a baking tray previously lined with greaseproof paper. Sprinkle with the almond flakes.
  6. Cook in the oven for 40 min at 180c.
  7. Remove the cake from the oven and let it cool.
