A very light cake, perfect for breakfast or a healthy snack.

Serves: 8 people.
Ingredients:
- 150g flour
- 150g almond flour
- 100g sugar or erythritol
- 3 eggs
- 120g extra virgin olive oil
- the juice of 2 oranges (200g ish)
- baking powder
- 4 carrots, grated
- almond flakes to decorate.
- Preheat the oven to 180c.
- Put the carrots, eggs, olive oil and orange juice into a blender. Blend until smooth.
- Add the sugar, the two types of flour and the baking powder.
- Blend until completely mixed and smooth.
- Pour the mixture into a baking tray previously lined with greaseproof paper. Sprinkle with the almond flakes.
- Cook in the oven for 40 min at 180c.
- Remove the cake from the oven and let it cool.
