Carrots and avocado mousse

Preparation: 50 min, easy.

Serve: 4 people

Ingredients:

  • 500 gr carrots
  • 4 slice of rye bread
  • 2 avocado
  • black sesame seeds
  • lemon
  • ginger
  • pea shoot
  1. prepare the carrots and cut in 4/5 pieces. Steam cook the carrots for 20/25 min. and then blend them with a dash of extra virgin olive oil.
  2. Grate a little piece of ginger add to the carrots cream and stir it.
  3. Peel off an avocado, remove the seed and blend it with the juice of a lemon and a pinch of salt.
  4. break the bread into big pieces, put it on a baking tray, sprinkle with the black sesame seeds, and toast in the oven for 10 min at 200 degrees.
  5. put in 4 little bowls, or in glasses, first the carrot cream, then the avocado, and complete with the bread pieces, pea shoot and a few more sesame seeds.
