Ingredients:
- 500 gr carrots
- 4 slice of rye bread
- 2 avocado
- black sesame seeds
- lemon
- ginger
- pea shoot
- prepare the carrots and cut in 4/5 pieces. Steam cook the carrots for 20/25 min. and then blend them with a dash of extra virgin olive oil.
- Grate a little piece of ginger add to the carrots cream and stir it.
- Peel off an avocado, remove the seed and blend it with the juice of a lemon and a pinch of salt.
- break the bread into big pieces, put it on a baking tray, sprinkle with the black sesame seeds, and toast in the oven for 10 min at 200 degrees.
- put in 4 little bowls, or in glasses, first the carrot cream, then the avocado, and complete with the bread pieces, pea shoot and a few more sesame seeds.
