Breakfast Bars

Ingredients:

Topping

  • 120g butter
  • 520g smooth peanut butter
  • 4 eggs
  • 385g brown sugar
  • 2 teaspoons of vanilla extract

Oat mixture

  • 2 teaspoon of soda bicarbonate
  • ¾ teaspoon of salt
  • 1.5 teaspoons of ground cinnamon
  • 630g rolled oats

Fruit

  • 130g dried apricots chopped
  • 165g dried cherries
  • 240g chocolate chips
  • 90g flaked coconut
  • 165g dried cranberries
  • 165g sultanas
  1. Pre heat the oven to 180 degrees Celsius. Spray 33 x 23 CM baking tin with cooking spray, then leaved one side.
  2. Put all the topping ingredients into a mixer in the order listed and secure lid.
  3. Start the machine and slowly increase the speed. Blind for 20 seconds, or until smooth. Tamper if necessary.
  4. Meanwhile, in a large mixing bowl, stir together the oat mixture ingredients. Pour the topping mixture over the oat mixture, then mix well with a wooden spoon. The mixture will be very thick
  5. Stir in the fruit ingredients and mix well. pour into the prepared tin. Spread to even out the top
  6. bake for 20 to 22 minutes until the bars are lightly browned at the edges.
  7. Cool completely and cut into your preferred bar size.
  8. Still covered at room temperature.
