
This is a very quick and easy recipe if you are low on time!
Serves: 4/6 people
Ingredients:
- 1kg (fresh or frozen) of peeled prawns
- 4 courgettes
- 2 limes
- mint leaves
- breadcrumbs
- salt
- extra virgin olive oil.
Preparation:
- Peel the prawn and put it in a bowl.
- Cut the courgette in half lengthways and slice each half into 4 wedges.
- Mix the prawns and the courgettes and season with oil, salt, lime juice and some mint leaves.
- Sprinkle the breadcrumbs on top (I usually blend breadsticks to make the breadcrumbs).
- Preheat the oven to 200C.
- Arrange them on a roasting tray covered with baking parchment. Leave space between the prawns and the courgette.
- Add a slice of lime.
- Cook for 20 minutes.
- Serve warm and garnish with chopped parsley.
